How to Make Delicious Kimchi

Kimchi, a traditional Korean food, is not only rich in dietary fiber, but also beneficial bacteria and metabolites generated during the fermentation process can help improve immunity and improve health.

The basics of delicious kimchi is well-marinated cabbages and fresh fish sauce. Let's prepare it carefully with good ingredients. 


Main Ingredients

1) 3.3 kg of pickled cabbage

2) 1 radish

3) 80g of chives

4) 60g of leaf mustard

5) 40g of parsley

6) 1 tablespoon of glutinous rice flour

7) 1 cup of water

Seasoning and Sauce Ingredients

1) 1¾ cup of red pepper powder

2) 1/2 cup of anchovy fish sauce

3) 1/3 cup of canary fish sauce

4) 1/2 cup of pear juice

5) 4 tablespoons of onion juice

6) 1/4 cup of salted shrimp

7) 6 tablespoons of minced garlic

8) 1 tablespoon of minced ginger

9) 2 tablespoons of plum extract

10) 2 tablespoons of sugar

How to prepare the cabbages for kimchi

1) Remove the outermost leaves from the cabbages. 

2) Cut the cabbages in half.

3) Sprinkle the cabbages with water once and drain.

4) Cabbage needs to be moist so that the cabbages are well pickled.

5) To make salt water, pour 2 cups of salt and 2 cups of water and dissolve in a bowl.

6) Soak the cabbages and turn them around.

7) Prepare 2 cups of salt and sprinkle salt between cabbage leaves to pickle them.

8) Press the cabbages down with something heavy.

9) Turn over 3 times while marinating for 7 hours.

10) Wash the cabbages about 5 times and squeeze out some water by hand.

11. Drain for 30 minutes.

How to prepare other ingredients

1) Cut 1 radish thickly into 6-7cm lengths.

2) Cut chives, leaf mustard, and water parsley into 6-7cm lengths. 


How to make kimchi seasoning

1) In a pot, put 1T of glutinous rice flour and 1C of water, stir over low heat, boil and cool to make glutinous rice paste. 

2) In a bowl, add glutinous rice paste and put red pepper powder, anchovy fish sauce, canary fish sauce, pear juice, onion juice, salted shrimp, minced garlic, minced ginger, plum extract, sugar and mix them. 


How to make kimchi

1) After mixing the amount of kimchi seasoning, mix it with radish, chives, leaf mustard, and water parsley.

2) Mix the seasoning evenly in the order from the stem to the leaf part of the three pickled cabbages.

3) Put it well in a barrel and let it ripen at room temperature for a day, then put it in the refrigerator.
